Chef Florent Poulard serves up authentic and innovative cuisine. Taking pride of place, the vegetables are sourced from local producers. The meat and fish are frequently cooked whole.

He loves roasted meat and fish, cares about what he eats and is very interested in vegetables and plants.

He has travelled a fair bit, loving Greece, Kalamata olives and Peloponnesian honey. He also regularly goes to the Île de Ré to recharge his batteries, where he fishes for razor clams with the local salt.
Knowing everything there is to know about Jalapeño peppers, he is fond of natural environments and the landscapes of Ardèche; his love for sweetened chestnut purée is no secret.

As a true epicurean, he also loves wine and has a very sensitive palate to take care when selecting a bottle. He believes that great wines are equally good whether young or old.
He thinks that biodynamic agriculture is a remarkable production system and encourages his wine-making friends to adopt its methods as far as possible.
As a man of the terroir, he loves finesse, freshness and energy – in short, wines filled with emotion.
