La Spiruline des Oliviers (EARL La Perdrerie)
Olivier and Agnès Serradimigni own a family-run estate, passed down through the generations, and they decided to get the best out of the farming legacy their ancestors left behind by returning to farming practices that respect both the environment and the consumers.

"We planted 3 hectares of olive trees on the ancient farmland. In our greenhouses, we have the following:
- a 2-hectare grove of organically farmed apricot trees
- a 1-hectare grove of organically farmed citrus fruit trees
- a 100% French 650 m2 spirulina farm"

Spirulina is available to purchase all year round in dried form, powder form or tablets, as well as PDO Aix-en-Provence olive oil. Apricots are harvested at the beginning of May, and citrus fruits between September and March.

Day 2

Lambesc > Salon-de-Provence
Domaine des Béates
The estate has been a pioneer in organic farming for the region since the 1980s, and was taken over in 1996 by the Terrat family who strive to produce exceptional wines, while respecting the natural environment. The grapevines were planted at an altitude of between 250 and 350m in mostly calcareous soil, which provides white wines with a mineral taste, fruity rosé wines, and powerful red wines with great capacity for ageing.

The Costes oil mill
It offers a range of quality products: Fruité vert PDO Aix-en-Provence, fruité noir, organic olive oil and by-products such as tapenade, crushed olives and more.

The Moulin des Costes occupies buildings constructed at the end of the 18th century on the banks of the Canal de Craponne: the Moulin Jean Bertrand. This Pélissanne mill originally consisted of two parts: an oil mill and a flour mill.
Listed as a historic monument in 1992, it is now enjoying a veritable renaissance under the impetus of the Association des oléiculteurs pélissannais et environs.

Moulin Saint Michel
The Moulin Saint Michel has stood at the heart of Baux valley in Mouriès since 1744. Over three generations, the Rossi family developed a passion for this place, for its history and this noble profession.

In keeping with ancestral techniques, the olives are stored in our storehouses before being taken down to the heart of the mill to be stripped, washed and crushed. We carry out a first and the only cold extraction process to bring out the character of the olive oil, while preserving the identity of each variety, therefore producing high-quality oil that is classified as 'extra virgin'.
Our superb range of oils is a direct reflection of the Alpilles terroir, the different varieties of olives (Salonenque, Aglandau, Grossane and Verdale), that are characteristic of the PDO, and the talent of the miller.
This expertise has earned us no less than 76 awards and distinctions since 1975.
In each drop of this precious nectar, there is a piece of our land, a piece of our heart and our passion.
You will also find a selection of local products in the shop: jams, honey, crushed olives from the Baux valley, tapenades, etc. And of course, our range of olive oils.
This unique place in France, which has managed to preserve the 3 methods of making olive oil from 1744 to the present day, is open to the public all year round.
