For four generations and counting... In 1927, Marie Bouvier, Lionel's great grandmother, founded the restaurant and its reputation. From 1946 to 2001, her daughter-in-law, Yolande Bouvier, known as Mère Bouvier, built on this great reputation thanks to local specialities, including frogs' legs and creamy chicken, which are very popular dishes with the locals of the Bresse and Lyon areas. She was joined by her daughter Marcelle, Lionel Paccoud's mother. As for Lionel himself, he trained with the greatest Michelin-starred chefs and in the most renowned restaurants: Georges Blanc in Vonnas (department 01), La Bastide de Saint-Tropez (department 83), La Bastide St Antoine in Grasse (department 06), L'Oasis in Mandelieu (department 06). In 2001, he took over the family business and added his own personal touch to the regional dishes at this fine-dining establishment.
Specialities: creamy Bresse chicken, Ain free-range chicken, 'parmentier' pancakes, Dombes-style pan-fried frogs' legs with parsley, red mullet 'crosti' with olives, small mixed salad and aubergine caviar.
Regularly organised: bouillabaisse themed meal, theatre evening, themed meals.
