William Frachot, the land lover It’s almost how a child would imagine it. Practically a Dijonnais, William arrived in the city with his parents as a seven year old, born into a family of hotelier-restaurateurs. He spent the early 1990’s at Bernard Loiseau at Saulieu (Côte d’Or) and Jacques Lameloise at Chagny (Saône-et-Loire) - both Burgundy restaurants holding 3 Michelin stars apiece. Without forgetting his time spent with the renowned Dijon patissier Fabrice Gillotte, William took time to sail overseas after his hotel & catering schooling to go to Derby, England and Montreal, Canada before returning to Dijon and laying down his pans for good. Welcome to the Hostellerie du Chapeau Rouge, an ancient coaching inn. It’s 29 beautifully modern renovated rooms have been bringing the style of great outdoors, both sea & mountains, inside in unsurpassed style for the last 14 years. The first Michelin star was plucked in 2003, and the second hooked in 2013... but William believes 3 is a lucky number for him...
