The restaurant offers clear, zen décor, with unsurpassed panoramic views over the vineyards of Pernand-Vergelesses and the hill of Corton. Awarded a Michelin star in the Trophée de l’Innovation 2014 du Gault et Millau, chef Laurent Peugeot is a craftsman of flavour and a technician in attention to detail; he invites his guests to taste his culinary mix of Burgundy and Japanese influences, his blending of flavours, textures and cultures. For an experience of total immersion, close to the team, the Charlemagne offers dinner "on the other side of the mirror" when you choose one of the guest tables located in the kitchen. For greater privacy, the Petit Salon is available for lunches, dinners with family, with friends, seminars... On the terrace: enjoy the silence, the sweetness of Burgundy and the light on the vines that grow alongside the bamboo.
A successful blend of Burgundian and Asian specialities
Chef Laurent Peugeot skilfully combines different flavours and textures in his Michelin-starred restaurant in Pernand-Vergelesses, along the Route des Grands Crus (Route of the Great Wines). After working with some of the region’s greatest establishments, and spending five years in Japan, this creator of great taste had some original and inspired recipes to share. In the kitchen, the chef concocts his cuisine by focusing his efforts on harnessing energy, on creativity and precision.
