
Claire Thomassot
A warm, human-sized mill. A small building hidden in the white oaks, at the end of the world, in the peaceful hamlet of Montèze. It is there, in the commune of Verfeuil, that Claire Thomassot tried her hand at adventure, twenty-five years ago. She started to produce olive oil. Originally from Goudargues but settled for thirty-five years in Verfeuil, the Gardoise, with her husband, first favored a beautiful plot of old olive trees that she owned in Goudargues.
Today, the Thomassot oil mill has some 1,500 olive trees. "We planted picholine with the aim of producing a PDO (protected designation of origin) olive oil from Nîmes," says Claire Thomassot.
